Origin & Vintage 100% Tulare County, California 2005 Vineyard & Soil West DeGraff; Hesperia sandy loam, neutral Picking date October 20th Vinification Softly crushed berries. Fermentation with selected yeasts at 85F, maceration for 12 days in piston tanks (punch down) alternate with delestage. Aging In stainless steel tanks at 60F for about 16 months. 70% Malolactic fermentation. 2% barrel aged. Residual sugar, Alcohol 0.3%, 12.6% Character Robust but silky. A Gentlemen Serving temperature 65F Food pairing Barbequed red meat, sausages, bean dishes.

Winemaker's Notes:   Full body Cab, 16 months aging, 2% in French barrels. Deep scarlet red, silky tannins, full flavor finish of red and dark berries mixed with ripe fruit. 12.6% Alcohol.
